Did it happen?

It was similar to the Sd.Kfz 11 in that they were both 3 ton vehicles and I believe they had basically the same payload capabilities.......

Yes it did.

Towing capacity of a Opel, Ford or similar Maultier was 2 ton, more than enough for a Pak 40 with a weight of 1,425 ton

There is no practical reason why the Maultier cannot tow a Pak40. Yet I cannot say that I have ever seen a picture of the combination that may be that it was a rare combination.

From Axis History Forum quoting Martin Block
At the beginning of January 1945 the Armee-Pz.Jg.Abt. 721 consisted of
Stab
Stabskp.
1., 2. & 3. Kp.
The 4. Kp. (former s.H.Pz.Jg.Kp. 671) was still refitting in Mielau/Ostpreussen.

Out of the authorised strength of 14 s/p and 36 towed a/t guns on 1.1.1945 only a total of some 14 - 7,5 cm s.Pak 40 were available, 10 of them operational and 4 in short term repairs. In addition to that there may have been guns in long term repair but German 'Zustandsberichte' usually did not include these*.
Half-tracked 'Maultier' trucks were used as towing vehicles.
The Abteilung was rated as fully capable of defensive actions but only limited capable of offensive actions.
